Italian food – two words that can make the most miserly person in the world smile with anticipation. Who doesn’t love a saucy meal with the pungent flavors of oregano, garlic, onion and thyme? Just the thought of all of that deliciousness makes one’s mouth water! Unfortunately, there are many people who think that enjoying Italian food means to just pile on the pasta and fire on all engines. That is not true, however. The following is an incredibly tasty dish that even those who cannot tolerate gluten can enjoy; there are no noodles required.
Italian Pesto Chicken Bake This recipe includes just four ingredients: * Boneless, skinless chicken breasts * Pesto (homemade or jarred) * Sliced fresh tomato * Mozzarella Pretty simple right? It gets even better; this is so easy to put together, but it tastes heavenly. Your family and friends will think you spent hours on this amazing dish.
Start by preheating the oven to 450-degrees and spray a 9×13 baking dish with oil. Place the chicken breasts in it and then spoon the pesto over each breast equally. Cover the pesto-laden breasts with sliced tomato and then cover with cheese. Place in a pre-heated oven and bake for 40 minutes. Serve with salad or side of your choice, and this dish is sure to become a quick family favorite!
Chef’s Tips: * Beefsteak tomatoes sliced 1/4-inch thick work well for this recipe. * If those are not available, slice up Roma tomatoes. Although smaller, they lend a rich flavor that accents the dish. * For added impact and freshness, use fresh mozzarella. * Love greens? Make this recipe your own by adding fresh basil or spinach leaves under the tomatoes! * Another great addition is fresh grated Parmesan cheese on top along with cracked black pepper.
