An Recipe For Making Irish Potato Pancakes:

St. Patrick’s day is coming up, and what better way to celebrate than with authentic Irish potato pancakes? Formally called potato farl, these pancakes are made from potatoes, flour, and chives and sandwiched between bacon, tomatoes, and blood sausages.

To begin, take two large potatoes and peel them and cut them into quarters. Then, put the potatoes into cold, salted water. Bring the water to a boil, and let the potatoes cook for about 15 minutes.

Next, drain the water from the potatoes and put them back into the saucepan to mash them. Once the potatoes are mashed, season them with salt and pepper and add some flour to the mixture. Next, add the chives to the potato and flour combination and stir them together.

Then, on a lightly floured surface, take some of the potato dough mixture and form it into a pancake shape. After you have made a pancake shape, heat some oil in a frying pan, and place the pancake in the pan to fry.

Fry it on one side for a couple of minutes and then turn it over and do the same with the other side.

As you are cooking the pancake, you can prepare the fillings. Place the tomatoes, blood sausage, and bacon on a cookie sheet covered with foil and heat them in the oven.

To serve the potato farl, cut it into quarters and place the tomatoes, blood sausage, and bacon on top of one piece of the pancake, and then cover the with another piece to create a potato cake sandwich. Once you have plated the dish, dig in and enjoy.
